Wash the potatoes, cut in half lengthwise with the peel on.
Place in a pan of boiling water and cook until medium soft.

Drain and remove them from the water.
Scoop out the "flesh", taking care not to split the skin.
Put the skin to one side, don't throw away.

Place the flesh into a mixing bowl, add the butter, sliced onion and half of the cheese.
Mix well.

Put the mixture into the skins, sprinkle the rest of the cheese on the top and place under the grill for 2 minutes or until cheese is melted and bubbling.
5.
Serve and enjoy!
